Lemon Dill Lamb Meatballs




1 lb Thomas Farms ground lamb
1 shallot, grated
2 cloves garlic, grated
1/4 cup chopped Italian parsley
3 tablespoons chopped dill
zest of one lemon
1 tablespoon fresh oregano leaves or 1/2 teaspoon Stonemill (dried) oregano
olive oil

I made these using ground lamb I bought from Aldi along with Happy Farms Preferred feta, L’oven white mini pita, SimplyNature mini cucumbers, and Little Salad Bar beet hummus.
