Smoked Salmon & Green Onion Latkes

One of the best things about Aldi is that they have sliced, cold smoked salmon year round for only $3.49/3 oz. Smoked salmon (i.e. lox) is a staple on bagels and can be quite pricy! I’m happy to say that the lox I buy at Aldi is always really good, flavorful and not too smoky. While I love it on bagels or crackers with cream cheese, I loved it tossed in with potatoes in these latkes. What better way to kick off Hanukkah?!

Ingredients:
2 1/2 lbs ALDI (brands vary) Russet potatoes, grated
1 medium ALDI (brands vary) onion, grated
2 ALDI SimplyNature Organic Cage Free Brown Eggs, beaten
3 oz minced ALDI Specially Selected Cold Smoked Salmon, chopped
1/4 cup matzo meal
1/4 cup ALDI (brands vary) finely minced green onion (green parts only!)

canola oil

to serve: ALDI Friendly Farms Sour Cream

Directions:
In a large pan, heat about 1/4 inch canola oil. In a large bowl, toss all of the ingredients together to combine.

Form into flat patties. Fry in hot oil, flipping halfway through, until just golden.

Drain on paper towel lined plates. Serve with sour cream.

Yield: about a dozen latkes, depending on size.
