Acorn Squash Pulled Pork Sliders

Another recipe made only with Aldi ingredients! I bought the squash when it was on sale for 39¢/lb, the pork was $6.97 and I used the brioche dinner rolls  ($3.99/12 rolls) that are available during the holiday season as slider rolls. Super easy, super flavorful! The squash breaks down and makes a sauce that is enhanced by the spices.

 

Ingredients:
2 1/4 lb ALDI US Boneless Half Pork Butt Roast
1 ALDI US onion, cut into 1/4 inch half-moon slices
4 cloves ALDI US garlic
1 cup ALDI (brands vary) roasted acorn squash pulp (from 1 acorn squash)
1/4 cup ALDI SimplyNature Organic Apple Cider Vinegar
1/2 teaspoon ground chipotle or SimplyNature Organic Ground Cayenne
1/2 teaspoon ALDI SimplyNature Organic Ground Cinnamon
1/2 teaspoon ALDI Stonemill Ground Ginger
1/2 teaspoon ALDI Stonemill thyme
1/2 teaspoon ALDI Stonemill Ground Allspice
ALDI Stonemill Table Salt
freshly ground ALDI Stonemill black peppercorns

Directions:
Pour everything into a four-quart slow cooker. Cook on low 8-10 hours. Remove the meat to a cutting board and shred it. Set aside. Mash the contents of the slow cooker until fairly smooth. Return the pork to the slow cooker. Toss to evenly distribute the sauce. Serve on ALDI Specially Selected Brioche Dinner Rolls.
